Filipino Pork Adobo

This dish is considered the unofficial national dish of the Philippines! Adobo is one of those dishes that so many people know and love about Filipino food. It is a staple that is sure to be found at any function, from potlucks to many Filipino restaurants. This dish has many variations that go from tangy to savory and even somewhat sweet and earthy.


I have to be honest; this experiment of concocting recipes for Filipino Food Month has got me testing all that I know about Filipino food. I have played around with this recipe several times and have produced a recipe that I can say that I am proud to have created. This recipe is sweet, savory, tangy, and earthy but has a deep umami flavor. I surprised myself with this recipe. Without further ado, the following is the recipe I have created to be shared. Also, here is a bonus recipe for garlic rice!



Pork Adobo Ingredients:


  • 2 - 3 lbs Pork Belly (no skin)

  • 1 C Apple Cider Vinegar

  • 1 C White Vinegar

  • 1/2 C Brown Sugar

  • 4 Tbsp Black Pepper

  • 2 C Garlic Cloves

  • 1/4 C Soy Sauce

  • 2 Tbsp Onion Powder

  • 1 Tsp Cinnamon

  • 2 Whole Star Anise

  • 1 Tsp Ground Ginger

  • 3 Bay Leaves

  • 1 1/2 Tbsp Chili Peppers

  • 1 Can of Coconut Milk

  • 2 Tbsp Ginasang Bagoong (Sautéed Shrimp Paste)

  • 2 Tbsp Fish sauce


Garlic Rice Ingredients:


  • 3 C White Rice (Refrigerated and Already Cooked)

  • 1 C Minced Garlic

  • 2 Tbsp Black Pepper

  • 2 Tsp Ground Onion

  • 2 Tbsp Coconut Oil

  • Sesame Oil

  • Salt to taste



Directions:


  • Chop pork belly into 1-2" cubes

  • Heat up the pan and sauté pork belly with garlic cloves until browned on all sides; sprinkle freshly cracked black pepper, onion powder, cinnamon, ginger, star anise, bay leaves, and chili peppers while you are doing this



  • Sauté in the pan until browned on all sides

  • Add in vinegar, coconut milk, brown sugar, fish sauce, and shrimp paste



  • Allow the adobo to simmer for 45 min to 1 hour covered to allow the pork to become nice and tender



  • Afterward, uncover and allow the sauce to reduce. Once it is reduced to your liking, it is complete! Set aside, and now let's work on the Garlic Rice Recipe




Garlic Rice Recipe:


  • In a pan, heat up with coconut oil

  • Sauté garlic in the pan and add in black pepper and ground onion

  • Sauté until golden brown


  • Add in rice, then break up the pieces, and allow to sauté slightly

  • Add in sesame oil and salt to taste

  • The rice is complete once the garlic starts to brown slightly
