Fried Chicken Adobo is not a relatively well known dish to many in the US but it is a dish that many restaurants and caterers have been offering in their selection. I learned this recipe from my mom who learned the recipe from her Tita Becky. It is a tender, garlicy, tangy, and absolutely juicy dish. It is a simple dish that anyone can make!
Ingredients:
2 - 3 lbs Chicken Wings - in Drummettes and Flats
1 lbs Garlic
1 container of Apple Cider Vinegar (I prefer using Braggs)
1/3 C Lemon Pepper
2 Tbsp Course Salt
3 Bay Leaves
1 Bundle of Lemon Grass
Dredge:
2 C Flour
1/4 C Corn Starch
3 Tbsp Lemon Pepper
Directions:
Put wings into a stock pot
Finely chop garlic and put in pot
Sprinkle salt and lemon pepper over top then and in bay leaves and lemon grass
Pour apple cider vinegar into the pot until the wings are fully covered
Allow dish to simmer in the pot covered for 1.5 hours, stirring periodically
Once you see that the chicken is nice and tender, lay wings on a sheet pan covered with parchment paper
Allow chicken to cool in the refrigerator or freezer for 30 - 45 min
In a ziploc bag combine flour, corn starch, and lemon pepper
Put wings in and dredge completely
Fry wings for about 6 - 8 minutes until golden brown
Optional:
Use Banana Ketchup to garnish for sauce with green onions to garnish.
