Banana Turon - Banana Lumpia

Do you have some bananas that are getting past their prime? I generally make banana bread, but this time, I decided to make some delicious banana lumpia!


They are generally made with saba bananas as they are known to be cooking bananas with their sweet and tangy flavor and are known for being starchy. I used regular Cavendish bananas as they were what I had on hand. I paired these caramelized, gooey, and crunchy lumpia with a salted caramel gelato from a local gelato shop in Corktown, Detroit, at Momento Gelato.



Ingredients:


  • 2-3 Bananas

  • Lumpia Wrapper

  • 1/2 Cup of Brown Sugar

  • Jackfruit

  • Canola Oil or a Neutral Oil for Cooking

  • 1 Egg

  • 2 Tsp Cornstarch

  • Optional Salted Caramel Gelato


Directions:


  • Set aside lumpia wrappers to defrost. I chose to use the Simex brand, which my family and I have used all my life. It is light but also crisps up nicely



  • Get your bananas and cut them into quarters. Then, cut the banana in half and slice down the center lengthwise



  • Add sliced jackfruit to the bananas, then sprinkle with brown sugar

  • In a bowl, mix cornstarch and egg together



  • Roll the bananas in a lumpia wrapper just like you would a burrito. Place the bananas in the lower 1/3, bring the bottom part of the wrapper over, slightly roll upwards, fold the sides in, and then use the egg and cornstarch mixture at the ends to seal the lumpia

  • Fry the lumpia/turon for approximately 8-11 minutes. They are ready when they are nice and golden brown! Pair with some gelato or ice cream
